Getting a blue cheese made me instantly want to put it in a sandwich, which I did. After enjoying my sandwich with some Texas Pete, I liked the blue cheese a lot, though it could have a more prominent taste. The big problem with this cheese is that the smell of blue cheese lingered on my hands for a long time after touching it. I had to wash my hands off and it was STILL smelly. Still tasty, though.
Chimay Grand Cru
I tasted this very stinky cheese a while back and forgot to blog about it. I remember it not being very flavorful, or at least not flavorful enough to make for how bad this cheese smells. It’s been making my fridge rank and I can’t bring myself to try it again for fear of dying of stinky. It belongs to the trash now.

Borough Market Cheddar
This cheddar borders on being hard, and is very crumbly. It’s got the flavor of cheddar, but its sharpness is overwhelmed with a very grassy flavor. While very interesting in taste, its not one of my faves but I’ll definitely still be eating it all because by golly it’s still cheddar.
Asiago Stravecchio
Light yellow hard cheese that pretty much bored me. Pretty mild taste that lingers in your mouth for a bit. Not a bad taste though, slightly spicy and bitter. Probably good for sandwiches. Cheese Cheese Cheese.
Black Diamond Cheddar
I think I may have just tried the sharpest cheddar EVAR. The cheese has a strange consistency for cheddar, it is very crumbly and fell apart as I sliced it. When I popped it in my mouth I was very surprised at how sharp it was. It is, dare I say it, TOO sharp. It’s probably not something I can eat a lot of at a time, and with my belly that’s probably for the best.
Comté 15 Month Hand Selected
Comté is an enjoyable semi-hard that reminds me a lot of Dubliner. The taste is mild and nutty and just slightly sweet.. It’s interesting taste makes me want to combine it with the appropriate wine, but it probably wouldn’t work very well as a snack cheese. And we all now the best cheeses are snack cheeses.
Kilaree Cheddar
My first cheese I tasted after the boatload of birthday cheese I received from Holly, Kilaree Cheddar is a good example of all that I love about Cheddar. The cheese smells distinctly of cheddar, fresh and milky. The taste is not the sharpest, but it has a slight sour taste to it and an all-around boldness that makes it very tasty and a treat to my tastebuds. I can only hope that tackling the rest of my mountain of chesse will be so enjoyable.
